These bar cookies are so wonderfully decadent  — I never realized that the combination of chocolate and raspberry could be so divine until the first time I tried these!  We make them often and they never last long!

Ingredients:

1 cup (2 sticks) butter, softened

2 cups flour

1/2 cup packed light brown sugar

1/4 teaspoon salt

2 cups (12 ounce package) semi-sweet chocolate morsels

1-1/4 cups (14 ounce can) sweetened condensed milk

Seedless Raspberry jam

Directions:

Preheat oven to 350 degrees.

Beat butter until creamy.

Beat in flour, sugar and salt until well mixed.  It will make a crumbly mixture.

Press about 2 cups worth of the crumb mixture onto bottom of a greased 13×9 inch baking pan.  This part is always a challenge for me — even with floured fingers I make quite a mess — but the kids love to help make a mess with me, so it all works out.

Set the rest of the crumb mixture aside.

Bake the crust  for 10-12 minutes, edges should be lightly golden brown.

While the crust is cooking, combine 1 cup of the morsels and the sweetened condensed milk in a small saucepan.  Melt over low heat, stirring constantly until smooth.  Pure chocolate bliss!!

As soon as the crust is ready, pour the chocolate mixture over the hot crust.  Pause to inhale deeply and contemplate the wonders and joy of chocolate!

Sprinkle reserved crumb mixture over the chocolate filling.  The kids love doing this part, they get all creative making designs and patterns while I hover in the background wishing they would hurry so I can bake the darn thing and eat it — LOL

Drop teaspoonfuls of raspberry jam over the crumb mixture.  Don’t skimp on the raspberry jam — decadence requires lots of jam :-)

Sprinkle with the remaining chocolate morsels — again, don’t skimp — you can’t achieve decadence without plenty of chocolate too!  Not enough in one bag — I won’t say a word if you feel the need/desire/compulsion to sneak a few extra from a second bag!

Continue baking for 25-30 minutes or until center is set.

Cool on rack, or for as long as you can resist, which in our household means as soon as possible, then cut and enjoy!  The sweetness of the chocolate and the slight tartness of the raspberry go so well together — truly decadence that must be enjoyed repeatedly!
